Sweet Potato Quinoa Pilaf

About the Recipe

This recipe is fantastic as it can be cross utilized in so many different things and the ingredients are so versatile that they can be used through out the week or month.

Ingredients

  • 2 each Sweet Potatoes

  • 1 T. Olive oil

  • 2 cups Cooked quinoa

  • 1 each Red onion

  • 1 tsp. Olive oil

  • 2 Green onion

  • 1 tsp. Thyme

  • 1/2 cup Crumbled feta cheese

  • 1 tsp. Kosher salt

  • 1 tsp. Granulated garlic powder

Preparation

Step 1

Preheat oven to 400 degrees. Peel and dice sweet potatoes to pea size chunks. Toss sweet potatoes in olive oil, kosher salt, and granulated garlic powder. Roast in oven for about 20 minutes or until sweet potatoes are tender.




Step 2


Boil quinoa according to packaged directions.



Step 3


Chop fresh thyme really fine, and slice green onions, be sure to use the bulb. Dice red onions fine and set all aside.



Step 4


While quinoa and sweet potatoes are cooking and rest of ingredients are prepped, then warm saute pan to medium heat. Add olive oil. Be sure pan is warm before adding the red onion. We want to slowly caramelize the red onion, stirring semi frequently. Add cooked sweet potatoes and quinoa to saute pan to mix, along with fresh thyme, green onion, and feta cheese. Serve with your favorite main entree.
